Som Tam Thai Recipe
Start with large (head-sized) mortar and pestle
Add:
2 whole cloves garlic, peeled
1-10 fresh red chiles (I like 3-4; 10+ = Thai spicy)
Healthly pinch of shredded green papaya
*pound (not too hard as to kill the garlic, not too soft) until chiles are in pieces*
Add:
2-3 Tbl roasted peanuts
1 Tbl lime juice
2 Tbl palm sugar
1-2 tsp fish sauce (nam blah)
Small pinch sea salt
1 Tbl small (large fingernail clipping) dried shrimp
*pound until mixed well*
Add:
3 sliced (2-3 pieces each) cherry tomato
1 generous handful of shredded green papaya
1/2 dozen bite-sized pieces of raw Chinese long bean
*pound (not too hard to kill the tomatoes) to release a good bit of papaya juice and mix well*
Plate (and serve with sticky rice if desired)
